I've signed on for the 21 day trial and in setting up a trial project:
1) the instructional videos show an entirely different workbench or profile for constructing a project \
2) while the instructional video says to hit "apply" to save the chosen transition there is no such button on the trial version.
Thoughts?

Which instructional videos have you seen with a different UI for constructing a project? I want to make sure we're looking at the same content.
There should be an Apply button in the bottom-right corner of the transition selection window. If you're not seeing this, get in touch with us through the Contact Us form and we'll figure out what's going on.
